PREPARE THE OCTOPUS

We start with the Tako ้ฎน (the Japanese word for octopus).
First boil it for 30 to 45 mins, till is tender enough.
Then just cut it in little pieces.

MAKE THE BEST BATTER

Time to prepare the takoyaki batter.
Mix flour, eggs, dashi (a light Japanese fish stock), soy sauce and a bit of salt.

FOR A BETTER RESULT, MIX THE SOLID PART FIRST.
THEN INCORPORATE GRADUALLY THE LIQUIDS (WHILE MIXING).

PREPARE YOUR TAKOYAKI COOKER

Ready for perfect takoyaki?
Time to cook them, giving the iconic round shape.

Turn on your Takoyaki Machine, whether youโ€™ve an electric takoyaki pan, a gas-powered takoyaki maker, or a more basic one to place on your kitchen burner.

When your cast iron takoyaki cooking plate is hot enough, put oil in the each hole.

THE OIL GIVES YOUR TAKOYAKI A CRISPY SKIN AND MAKES IT EASIER TO FLIP, WITHOUT THE BATTER BEING STUCK.

Fill your takoyaki griddle up with the batter.

AGAIN: BE GENEROUS (WITH THE BATTER MIX)! IF IT OVERFLOWS, THATโ€™S OK!
THE ENTIRE TAKOYAKI GRILL TOP SHOULD BE COVERED WITH THE BATTER.

ENRICH WITH THE FILLING

You’re doing good! Let’s now put a piece of octopus into each hole.

Over the top of everything, add Tenkatsu (tempura batter bits), spring onions and the pickled ginger in very little pieces.

CUDDLE YOUR TAKOYAKI

As the batter starts to firm, Take your cooking skewers and โ€œdrawโ€ an “X” pattern (in between all the holes).

When the bottom part of the balls are crispy, rotate them.

AFTER ROTATING, PUSH ANY OVERLAPS INTO THE HOLES.
THIS WILL HELP TO GET THE NOTORIOUS TAKOYAKI ROUND SHAPE.

Gradually the takoyaki should start to be very crunchy.
When the surface proudly shows a golden brown texture, well…
…theyโ€™re ready to be served!

6.
ADD SOME MAGIC

Complete them with a delicious takoyaki sauce (if you prefer, you can use a regular bbq sauce instead) and some mayonnaise (a Japanese one if you have).

Finish the takoyaki plate with a pinch of Aonori (green nori seaweed) and some bonito flakes (Katsuobushi ้ฐน็ฏ€).
